The next time you visit Walt Disney World, you should make a point to stop at the lounge outside of Ohana in the Polynesian for a tropical drink or two. Can’t decide which one to get? I suggest the Lapu Lapu. It’s a rum drink reminiscent of a Hurricane that is served in a pineapple. I had one for the first time last year and decided that I needed to make it for the blog!

Obviously I forgot about that until I was listening to an episode of America’s Test Kitchen Radio and they were talking about a pineapple corer/slicer that they liked. It was only $6 so I hopped on the Amazon ordered it, bought some pineapples and rum and set out to recreate this signature drink.

If you don’t have pineapples or a pineapple corer (and don’t want to get one), serve these in a glass with a little umbrella and some pineapple slices for garnish. I went authentic with the hollowed out pineapple for my Lapu Lapu.

Ingredients
  • 1 Pineapple, hollowed out with this
  • 2 oz Myers Rum
  • 2 oz Orange Juice
  • 3 oz Pineapple Juice
  • 1 oz Sour Mix
  • 1 oz Bacardi 151 floated on top
Instructions
  1. Shake everything except the 151 with some ice to thoroughly chill it
  2. Pour the drink into a hollowed-out pineapple (or glass if you have to)
  3. Top with the 151 and serve

When you’re done drinking your Lapu Lapu from your pineappley cup, cut the pineapple into wedges and feast on the goodness within. There should still be some flesh in there that has absorbed a bit of the drink.

Feed the FreezerFreezer Tips Make a Pitcher!

To make a pitcher of Lapu Lapus, change the ounces to cups and leave out the 151. Serve over ice and top the individual drinks with a 151 floater.

Fun FactsFun Facts

A pineapple’s outer color doesn’t have anything to say about the tasty pineapple inside so look for plump and fresh looking pineapples. Pineapples don’t ripen any more than they are when they are picked.

Sweet Tea

There is nothing more southern than a good glass of sweet tea. This is simple iconic drink goes great with pretty much any meal and is the perfect cool drink to enjoy while sitting in a rocking chair on the front porch. If you’re going to get into southern cuisine, you’ll need a great sweet tea recipe under your belt.

Sweet tea is one of those things that seem simple but without the right technique can turn out bitter and blah. My mom makes the best sweet tea in all the land and her trick is to not let the tea boil. If you let it boil, it’ll be bitter.

Ingredients
  • 3 Family Size Iced Tea Bags
  • 1 Cup Sugar
  • 7 Cups Water
Instructions
  1. Put the 3 tea bags in a small pot with 2 cups of water and bring to a boil over medium heat.
  2. As soon as the water boils, turn off the heat and let the tea steep for about 5 minutes.
  3. Remove the bags from the hot tea and pour into a pitcher with the sugar. Stir to combine.
  4. Once all of the sugar has dissolved, add the remaining water and refrigerate until ready to serve.

Don’t let your tea boil or it will get bitter. The key is taking it off the heat just before the water and tea boil.

If you’re making tea for a crowd, double the tea, double the sugar and use a gallon container of water from the grocery store. Once you’ve mixed everything up, put the tea back into the gallon jug and you have a container to transport your tea in!

My mom uses her own blend of teas when she makes sweet tea. She uses 1 Tetley and 2 Luzianne tea bags.

Old Fashioned

I am not a huge fan of fancy beers or martinis or gin in any form but I needed a drink to order when I went out to classy places so I decided on the Old Fashioned. It’s basically a glass of whiskey with sugar and fruit in it, but it’s tasty, has a classy name and is something that men with cool hats drank in the 20s.

I like to use bourbon when I make an Old Fashioned. I could give you a whole song and dance about flavor profile but honestly it’s because the first time I ordered one, they asked me what kind of whiskey I wanted and I said “Maker’s Mark.” It’s the only whiskey I knew at the time and so I went with it. Enjoy!

Ingredients
  • 1 Slice of Orange
  • 1 Sugar Cube
  • 4 Dashes Orange Bitters
  • 4 Dashes Angostura Bitters
  • Ice
  • 2 – 3 oz Bourbon
Instructions
  1. Place the slice of orange in an old fashioned (or rocks) glass.
  2. Saturate the sugar cube with the bitters and muddle the sugar cube and orange together.
  3. Fill the glass with ice, pour in the bourbon, stir, sip, and talk of memories past.

Old Fashioned tipTo guard against overdoing it with the bitters, place a napkin on top of your glass and the sugar cube on top of the napkin and then add the dashes of bitters to the cube. The napkin catches the overrun and you can drop the saturated cube in when you’re finished.

The secret to clear ice is filtered water, boiling, cooling, boiling again, cooling again and then freezing. Personally, I’m fine with cloudy ice but that’s just me.

Contrary to popular belief, bourbon can be produced anywhere in the United States and isn’t just from Kentucky. It does have to be aged in a new barrel and made mostly of corn. All bourbons are whiskeys but not all whiskeys are bourbons.

This quick and easy margarita recipe is the perfect companion to a lazy day by the pool. It only requires 4 ingredients, is easily doubled, and doesn’t need to be blended. I mix up a batch of these tasty boat drinks whenever we want to pretend we’re at the beach and so should you!

This recipe comes to us by way of Lisa’s dad. The story goes that one night he was at a party, tasted this not-so-frozen concoction and immediately called Lisa to give her the recipe before he sailed away and forgot how to make them. I am glad he did because now we are always just a pitcher away from Margaritaville.

  • 12 oz Frozen Limeaid
  • 12 oz Tequila
  • 12 oz Sprite Zero
  • 12 oz Beer (Corona or Landshark)
Instructions
  1. Combine all ingredients in a large pitcher and stir until the limeaid melts.

If you don’t want to pull out the measuring cup, the Limeaid comes in a 12 oz can. Knowing that, the recipe is a can of limeade, a can of tequila, a can of Sprite Zero and a bottle of Corona. Easy!

Frozen Watermelon Daiquiri

Watermelon always seems like a great idea at the time but what do you do with leftover watermelon? I say you mix it with rum and make a daiquiri out of it! This cold and refreshing watermelon daiquiri is the perfect accompaniment to a hot summer day. Mix up a batch, grab a book, and hit the pool!

Frozen Watermelon Daiquiri

Ingredients
  • 6 Cups Watermelon, Cubed
  • 6 oz Silver Rum
  • 4 oz Frozen Limeaid
  • 3 oz Sprite Zero
  • ¼ tsp Kosher Salt
  • 1.5 lb Ice
Instructions
  1. In a large blender, combine watermelon, rum, limeaid, Sprite Zero, and kosher salt and blend until smooth.
  2. Add the ice and blend until the ice is completely pulverized and you have a slushy mix.
  3. Store in the freezer for 30 minutes – 1 hour to let it firm up a bit. Don’t let it freeze all the way or you won’t be able to pour it.

This drink recipe – like most of my other drink recipes – is adapted from my friend Lisa’s daiquiri recipe and is a great base for any daiquiri you might want to make. Just replace the watermelon with whatever fruit you have on hand!

Watermelons are 92% water so look for one that is “heavy for its size.” What does “heavy for its size” mean? When you pick it up, you should think to yourself, “gee, that’s heavier than I thought it would be.”

  • ¾ Cup Sprite Zero

Pour this drink into popsicle molds and freeze for refreshing adult popsicles! All the stuff that isn’t alcohol will help the alcohol to freeze solid. Warning: once out of the freezer, the alcohol will get melty in a hurry.

The freezing point liquor that is 40% alcohol is approximately -17° F (-27° C). Your freezer at home is probably set at around 0° F (-18° C) and that’s why the bottle of vodka that you keep in there isn’t a vodsicle.

If you have any other fruits on hand, throw those in too! Apples, grapes, pears, melons, pineapple – the more the merrier!
You can serve this drink immediately over ice or let it hang out in the refrigerator for a while so the flavors can get to know one another.

The European Union wants you to know that true sangria only comes from Spain or Portugal. They want you to know that so much, in fact, that they passed a law saying that red wine blended with fruit can only be labeled sangria if it came from one of those aforementioned countries. So technically this is an Aromatized Wine-Based Drink.
